The majority of barrels used for storing Scottish whisky and rum are made from this wood, as almost exclusively American oak is used to make bourbon barrels. The American white oak (botanical name Quercus Alba) used here, with its particularly fine-pored quality, comes from the Ozarks in the state of Missouri, USA. Compared to European oak, the wood is characterized by a lower tannin content, but a much higher vanilla content in the wood.
