We are talking about Mostello.
A kind of port wine – only based on pears instead of grapes.
When I opened our Wagemut Kavalierbar in Vienna in 2023, I really wanted to use an Austrian product for our star cocktail – the Rum Cask Manhattan.
I found what I was looking for in the Mostviertel with an old Mostello.
The result is a masterpiece made from a 14-year-old Foursquare Single Cask Rum, old PX Sherry and Mostello.
Beautiful!
If the situation allows, we also like to prepare the drink at the table in front of the guest by tapping the rum directly from the barrel.
We are also happy to offer you a small sip of the Mostello so that you, as our guest, can taste it.
I am not exaggerating when I say:
I haven’t had a single guest who wasn’t excited about this material!

The great distiller Josef Farthofer – one of the best fruit distillers, who is currently developing into one of the most exciting whisky producers – processes the pears from his own cultivation, presses them into juice to ferment it – only to stop the fermentation again by adding the house's own pear brandy.
Barrel selection at Farthofer
Since the yeast converts sugar into alcohol during fermentation – but fermentation has been stopped – this mixture still contains the natural fruit sugar of the juice.
So far, so good. It tastes good already.
But what makes it really exciting is the barrel maturation.
The barrel I chose dates from 2009 and was bottled on February 21, 2025.
This means that the material was allowed to mature in wood for over 15 years.
And as we all know, pure magic happens in the barrels.
Oh, you wonderful oak tree! Without you we would live in a desolate world.

The targeted, slow oxidation through barrel aging creates a wonderful caramel note.
Over the years, the flavors become denser.
Everything is concentrated.
The result is a wonderful melt.
A nectar with an incredibly complex sweetness – which doesn't come across as sweet at all, as the delicate acidity balances everything out.
Wonderful.
This masterpiece comes in 434 bottles, naturally cloudy to preserve the full flavor.
Such discoveries always justify my travels – and good things are often so close.
